Dessert Guacamole

When invited to a guacamole party, I thought, “How can I make something no one else will bring?”

The answer came in the form of this Dessert Guacamole.

Serve with Graham crackers and you’ll feel like you’re eating scoops of tart-sweet-creamy key lime pie.

Ingredients:

  • 5 avocados (firm with slight yield when squeezed)
  • 8 large limes (zest 5 before squeezing them) plus 1 to use to zest on the finished dip as a garnish.
  • 1 large lemon
  • (You’re looking for about 3/4 cup of fresh citrus juice)
  • 3 8oz blocks of cream cheese
  • 1/2 cup coconut oil
  • 3 cups of confectioners sugar
  • 8-10 firm fresh strawberries (too smooshy and wet and they’ll make your dip runny)

Remove the seeds from the avocados by cutting them in half lengthwise, and removing the seed. Squeeze or scoop avocado flesh out of the skin into a bowl.

Zest 5 limes into a measuring cup. Then juice all 8 limes and 1 lemon into the same cup. Set aside.

Clean and cut strawberries into tiny 1/4 in pieces. Set aside.

Using a standing or hand held blender on medium high speed, beat the cream cheese until it starts to become smooth. Add the coconut oil. Slowly add the avocados. Once the avocado and the cream cheese have come together and there are as few lumps as possible.

Add the lime juice with zest into the mixture with the blender on medium low speed. Once it’s thoroughly incorporated, reduce speed to low and begin adding the confectioners sugar 1/2 cup at a time until the consistency of the dip is thinner than cake icing, but thicker than pancake batter.

Using a spoon stir in about 3/4th of the strawberries into the finished dip. These little guys add some taste and texture variety with the added benefit of looking like tomatoes in your sneaky dessert gauc.

Add the remaining strawberries on top as a garnish and finish with the zest of one lime all over the top of the dip.

Serve alongside Graham crackers (I prefer the cinnamon sugar ones). Seriously, be sure to display them together or else someone will use a tortilla chip and that just is not as tasty as Graham crackers.
